One of the culinary traditions of the “Baie de Somme”, this soup has a very agreeable taste in discovering the special aromas of samphire which is similar to that of watercress. Made with 30% samphire, some potatoes for consistency and a touch of sour cream to give it its smoothness. So much tradition in one soup.
Warm on low heat in a pot for ten minutes, do not add water. Serve with toasted croutons a salad and a slice of pâté.
