The maritime asters will delight you when you will discover the special aromas of this plant also called "pig's ear" or "sea spinach" in the “Baie of Somme”. The taste of this halophilic plant is similar to that of artichoke hearts. Maritime asters are preserved in water with a zest of lemon which maintains their special flavor.
Drain the maritime asters then rinse them with clear water, you can fry them in a pan with butter or cream from Normandy and chopped small onions or shallots. Serve with fish or white meat with mashed potatoes or rice. They are also a wonderful addition to fish curls.
